Hong Kong’s First Revolutionary Mooncake Wellington

Phoebe’s Kitchen Phoebe’s Kitchen’s Mooncake Wellington is officially launched, offering an unconventional fusion mooncake for the Hong Kong consumers. Made with the basic ingredients of a classic Beef Wellington, including beef tenderloin, parma ham and mushroom paste, the Mooncake Wellington preserves the shape of a traditional Chinese mooncake.

Limited to oven or air fryers to ensure the product quality

Quality and freshness are of utmost importance for the Mooncake Wellington. Freshly baked is when the mooncake is at its finest state, therefore, it has to be stored frozen and baked at home before serving. The detailed baking reference can be found from this link。Fresh out of the oven is the Mooncake Wellington that looks no different to the traditional ones. One slice in half will unveil the hidden surprise, a soft piece of beef tenderloin in pink, oozing with fresh meat juice.

*Mooncakes may appear in slightly different shapes or with small cracks on surfaces due to all being produced by hand. However, this does not affect the quality of the mooncake.

 
Mooncake Wellingon Baking Guide

Baking Guide:

  1. Defrost the mooncake wellington in the fridge (4°C) overnight (around 12 hours).
  2. Leave the mooncake wellington at room temperature for 20 minutes before cooking.
  3. Preheat the oven (Grill+Fan Mode) with the baking tray for 15 minutes to 230°C (190°C for air fryer).
  4. Take out the baking tray, line with baking paper and place the mooncake on top.
  5. Whisk an egg yolk and brush a thin layer of egg yolk over the surface of the mooncake.
  6. Place the baking tray on the middle shelf of the preheated oven at 230°C, bake 10 min for medium rare, 12 min for medium, 15 min for well-done (Air fryer 190°C, 8 min for medium rare, 10 min for medium, 12 min for well-done).
  7. Remove the mooncake from the oven and rest for 5-7 minutes, serve while still hot and enjoy!

The Birth of Mooncake Wellington

The birth of the idea following by a roaring success

The first time sharing the creation on social media was followed by unexpected positive reactions online. The founder of the brand Phoebe’s Kitchen, Phoebe, is a university student. When school was suspended due to COVID-19 in 2020, she had more time at home testing different recipes. During the Mid-Autumn Festival in 2020, Phoebe noticed the Hong Kong people’s love affair with Beef Wellington, and was determined to create something distinctive. After rounds of trials and errors, she created the innovative and delicate ‘Mooncake Wellington’, with a specially designed recipe for the pastry and fillings. The first post of her creation, the Mooncake Wellington was followed by 57,000+ likes, and 13,000+ shares across social media. It was also featured by some local F&B influencers and popular social pages such as ‘Subtle Asian Traits’.

Taking a gap year to hone her culinary skills to launching the product

With the Mooncake Wellington being well received by the market, she had decided to launch it as a product, so as to reach more people with her creation. She first took a gap year to work in the French and Italian restaurants in the Hyatt hotels in Hong Kong to hone her culinary skills. In the meantime, she also started building her brand, from sourcing ingredients, standardising the production to designing the package, she learnt on the job and is ready to launch the mooncake to the market in the Mid Autumn Festival in 2021.

Patience and creativity in Phoebe’s cooking

When it comes to cooking for guests, innovation is key in pleasing their palates. People love trying cuisines they haven’t tried before, so aside from taste, being creative and innovative is equally crucial’, said Phoebe Chan, Founder of Phoebe’s Kitchen and creator of Mooncake Wellington. To perfect the taste and the shape, the use of ingredients and the cooking time, more than a hundred mooncakes were produced until a desired recipe was finalised.
